Stir Fried Mushroom with Broccoli

1 packet
white shimeji mushroom
300g
broccoli, cut into florets
1/2
carrot, cut into flower shapes
2 tbsp
cooking oil
2
garlic cloves, chopped
1 tbsp
concentrated chicken stock or oyster sauce
1 tsp
Chinese rice wine (optional)
1 tsp
sesame oil
2 tbsp
cornstarch mixed with 80ml of the water used for blanching the broccoli
salt and freshly ground pepper to taste

Cut away the bottoms of the mushrooms.

Bring a saucepan of water to boil and blanch the broccoli and carrot for 1-2 minutes. Set aside.

Heat the oil and fry the garlic until aromatic. Add the stock concentrate, wine and sesame oil. Bring to boil and add the cornstarch solution. Return to a boil and season to taste. Add the mushrooms, broccoli and carrot. Toss to mix well.
