Mushroom Pasta Salad with Cesar Dressing

white or brown shimeji mushrooms

olive oil

bacon or pastrami, sliced

shallots, chopped

garlic cloves, chopped

dried pasta, cooked to packet instructions

cherry tomatoes, halved

parmesan cheese, grated
1 tbsp
chopped fresh herbs such as oregano, basil, parsley

Kewpie Cesar dressing
salt and freshly ground pepper to taste

Cut away the bottoms of the mushrooms. Heat the oil and sauté the bacon until lightly browned. Add shallot and garlic, and sauté until fragrant but not coloured.

Add mushrooms and stir-fry over high heat for 1 minute. Remove from heat.

Combine mushroom mixture with the rest of the ingredients in a large mixing bowl. Toss to mix well, and serve.
