Mushroom Coleslaw

white shimeji mushrooms
1 packet
brown shimeji mushrooms

olive oil

clove garlic, chopped

white cabbage, shredded

carrot, shredded

green apple, shredded

rib celery, thinly sliced

onion, halved and thinly sliced
2 tbsp
golden raisins, soaked
2 tbsp
chopped, toasted walnuts
1 tbsp
chopped mint leaves
1 tbsp
toasted sesame seeds
Dressing
2 tbsp
olive oil
2 tbsp
Japanese mayonnaise
1 tbsp
cider vinegar or lemon juice
salt and freshly ground pepper to taste

Cut away the bottoms of the mushrooms. Heat the oil and sauté the garlic until fragrant but not coloured. Add mushrooms and stir-fry over high heat for 1 minute. Remove from heat.

In a large mixing bowl, add the dressing ingredients and stir to mix well, seasoning to taste. Add the shimeji and the rest of the ingredients. Toss to mix and serve.
