Herbal Chicken Soup with Mushrooms

1 packet
Maitake mushroom, trimmed
2 litres
water
1
chicken (1.5kg), cut into 6 pieces
1 bag
Chinese herbal chicken soup mix*
salt and freshly ground pepper to taste

Bring water to boil in a stock pot or claypot. Add the chicken and herbal soup mix. Bring to boil, then lower heat to medium and simmer for 45 minutes.

Add the maitake, season to taste, and cook for another 15 minutes.
* Can be replaced with 30g yuk chuk, 30g solomonseal rhizome, 30g Chinese yam (wai san), 30g dried longan, and 10g goji berries (kei chi)
